Ingredients
- 2 cups cold brew coffee
- 1 cup coconut milk (unsweetened or light for creaminess)
- 2 tablespoons unsweetened cocoa powder
- 2–3 tablespoons sweetener of choice (such as maple syrup, honey, or sugar)
- Prepare the Mixture: In a large bowl or pitcher, combine the cold brew coffee, coconut milk, cocoa powder, and sweetener. Whisk thoroughly until the cocoa powder and sweetener are fully dissolved, and the mixture is smooth and uniform.
- Fill the Molds: Pour the prepared mocha mixture evenly into popsicle molds, leaving a little space at the top to allow for expansion during freezing.
- Freeze: Insert popsicle sticks, then place the molds in the freezer. Freeze for at least 6 hours or overnight until completely solid.
- Unmold and Serve: To remove the popsicles, run warm water briefly over the outside of the molds, then gently pull on the sticks. Serve immediately and enjoy your refreshing toasted coconut mocha popsicles.
Notes
- For a sweeter or richer flavor, adjust the amount of sweetener or use full-fat coconut milk.
- You can toast shredded coconut and sprinkle on top before freezing for added texture and to enhance the coconut flavor.
- Make sure the cocoa powder is well sifted or blended to avoid clumps in the popsicles.
- Use molds with sturdy sticks for easier handling.
- If you prefer a less caffeinated treat, substitute cold brew coffee with decaf coffee or strong brewed coffee cooled down.
