Ingredients

Scale

Vegetables

  • 2 medium sweet potatoes, sliced into 1/4-inch rounds
  • 2 medium beets, peeled and sliced into 1/4-inch rounds

Other Ingredients

  • 1/4 cup pesto (store-bought or homemade)
  • 150 grams burrata cheese
  • Olive oil for roasting
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat and prepare. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly brush it with olive oil to prevent sticking.
  2. Slice and season vegetables. Slice the sweet potatoes and beets into 1/4-inch thick rounds. Toss the slices separately in olive oil, salt, and pepper to taste, ensuring even coating.
  3. Roast the vegetables. Arrange the sweet potato and beet slices in a single layer on the prepared baking sheet. Roast in the oven for 25-30 minutes, flipping halfway through, until they are tender and slightly caramelized at the edges.
  4. Assemble the stacks. Let the roasted slices cool slightly. On a serving plate, layer one slice of sweet potato, then one slice of beet, repeating to form small stacks about 3 layers high.
  5. Add pesto and burrata. Spoon a generous amount of pesto over each stack, then top with a small piece or spoonful of burrata cheese for creamy richness.
  6. Serve immediately. Serve the stacks warm or at room temperature as an elegant appetizer or side dish.

Notes

  • You can use store-bought pesto or make your own for a fresher taste.
  • For a vegan version, substitute burrata with a plant-based cheese or a drizzle of cashew cream.
  • These stacks can be prepared in advance and assembled just before serving.
  • Roasting times may vary depending on the thickness of your slices and your oven, so check for tenderness before stacking.
