Ingredients

Scale

Filling Ingredients

  • 1 cup fresh spinach, chopped (or frozen, thoroughly drained)
  • ½ cup feta cheese, crumbled
  • ¼ cup cream cheese, softened
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • ¼ teaspoon dried oregano
  • Salt and pepper to taste

Pastry & Finishing

  • 1 sheet of puff pastry (store-bought or homemade)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Prepare the Spinach Filling: Heat olive oil in a pan over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Stir in the chopped spinach and cook until wilted, or if using frozen spinach, cook until all moisture evaporates. Remove from heat and allow the spinach mixture to cool completely.
  2. Mix the Cheese Blend: In a mixing bowl, combine the cooled spinach, crumbled feta cheese, softened cream cheese, dried oregano, and salt and pepper to taste. Stir everything together until well blended and creamy.
  3. Assemble the Twists: On a lightly floured surface, unroll the sheet of puff pastry. Spread the spinach and cheese mixture evenly over one half of the pastry sheet. Fold the other half over the filling to form a neat rectangle. Press down gently along the edges and the fold to seal the filling inside.
  4. Cut & Twist: Using a sharp knife or pizza cutter, slice the folded pastry into 1-inch wide strips. Hold each strip at both ends and gently twist a few times to create a spiral shape. Lay each twisted strip on a parchment-lined baking sheet, spaced evenly apart.
  5. Egg Wash & Bake: Brush each twist generously with the beaten egg to give a shiny, golden finish after baking. Preheat the oven to 375°F (190°C) and bake the twists for 15 to 20 minutes, or until they are puffed up and golden brown. Remove from oven and allow to cool slightly before serving.

Notes

  • For a vegetarian version, ensure the feta cheese is made without animal rennet.
  • Frozen spinach can be used but must be thoroughly drained to prevent soggy pastry.
  • The twists are best served warm but can be reheated in an oven to retain crispiness.
  • Freeze uncooked twists on a baking sheet, then transfer to a bag for future baking convenience.
  • Variations include adding chopped sun-dried tomatoes or olives for extra flavor.
