Ingredients

Scale

Sauce and Soup Base

  • 1 tablespoon avocado oil
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • Two 4-ounce cans diced green chiles
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons cumin
  • 1 teaspoon dried oregano
  • One 15-ounce can white beans (white chili beans or great northern beans)
  • 3 cups cooked, shredded chicken (rotisserie or cooked chicken breast)
  • 3 cups chicken broth
  • 1/2 cup sour cream
  • 1/4 to 1/2 cup heavy cream
  • 2 tablespoons cornstarch dissolved in 2 tablespoons water

Toppings

  • 1 bag frozen seasoned tator tots
  • Chopped cilantro
  • Chopped green onion
  • Hot sauce (like Tabasco), to taste

Instructions

  1. Make Your Tots: Follow the package directions to prepare the frozen seasoned tator tots. Since the soup cooks relatively fast, start with the tots first as they usually take 20-30 minutes to bake or air fry until crispy.
  2. Cook the Onions and Garlic: Heat the avocado oil in a large Dutch oven over medium heat. Add the diced onions and minced garlic and sauté them for 5 to 10 minutes until they become fragrant and softened.
  3. Add Spices and Chiles: Stir in the diced green chiles, salt, cumin, and dried oregano. Let the mixture cook for about a minute to allow the spices to release their flavor.
  4. Add Remaining Ingredients: Pour in the white beans, shredded chicken, chicken broth, sour cream, and heavy cream. Then add the cornstarch slurry (cornstarch dissolved in water) to help thicken the soup. Stir well and let it simmer gently until slightly thickened, about 5 to 10 minutes.
  5. Assemble and Serve: Ladle the spicy white chicken soup into bowls. Top each serving with a generous pile of the crispy seasoned tator tots, sprinkle chopped cilantro and green onions on top, and finish with a dash of hot sauce if desired. Serve immediately and enjoy!

Notes

  • Rotisserie chicken offers a great shortcut and adds extra flavor.
  • The amount of heavy cream can be adjusted to preference for richness.
  • If you prefer a thicker soup, add more cornstarch slurry gradually until desired consistency.
  • For a milder soup, reduce or omit the hot sauce and green chiles.
  • Seasoned tator tots add a fun crunchy texture but plain tots can be used as well.
