Ingredients

Scale

Rice Base

  • 2 cups cooked sushi rice
  • 1 tablespoon rice vinegar
  • ½ teaspoon sugar
  • ½ teaspoon salt

Salmon Topping

  • 12 oz skinless salmon fillet, cooked and flaked
  • ¼ cup mayonnaise
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil

Additional Ingredients

  • ½ cup shredded mozzarella cheese
  • 2 sheets roasted seaweed (nori), cut into small squares
  • 2 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and lightly grease an 8×8-inch baking dish to prevent sticking and ensure easy serving.
  2. Prepare Rice Layer: In a mixing bowl, combine the cooked sushi rice with rice vinegar, sugar, and salt. Mix thoroughly to evenly season the rice, then press it firmly and evenly into the bottom of the prepared baking dish to form a compact base.
  3. Make Salmon Mixture: In a separate bowl, combine the flaked cooked salmon with mayonnaise, Sriracha sauce, soy sauce, and sesame oil. Mix well to create a creamy and spicy topping.
  4. Assemble Bake: Spread the spicy salmon mixture evenly over the pressed rice layer in the baking dish. Then, sprinkle the shredded mozzarella cheese evenly over the salmon layer.
  5. Bake: Place the baking dish into the preheated oven and bake for 18-20 minutes, until the cheese is melted, bubbly, and slightly golden on top. Remove from the oven and allow to cool for a few minutes.
  6. Garnish and Serve: Sprinkle the chopped green onions and toasted sesame seeds over the baked salmon layer. Serve warm with the roasted seaweed squares to scoop and enjoy your sushi bake in a casual, sushi-inspired manner.

Notes

  • Use freshly cooked sushi rice for best texture and flavor.
  • Adjust the amount of Sriracha sauce according to your preferred spice level.
  • Leftover sushi bake can be stored in the fridge for up to 3 days and reheated.
  • For a dairy-free option, substitute mozzarella with a vegan cheese or omit it altogether.
  • If you don’t have cooked salmon, you can bake or pan-sear the salmon fillet beforehand.
