Banana Cinnamon Roll Dough
- 4 tablespoons unsalted butter (softened)
- 3 tablespoons creamy peanut butter
- ¼ cup brown sugar
- 1 tablespoon ground cinnamon
- 1 medium banana (thinly sliced into about 30 slices)
Glaze
- 3 tablespoons peanut butter
- 1 cup confectioners sugar
- 3–4 tablespoons non-dairy milk of choice
- 1 teaspoon vanilla extract
- Prepare the Dough: Make the banana cinnamon roll dough as described in the initial recipe steps, allowing the dough to double in size until it is light and airy.
- Roll Out Dough and Add Filling: Grease a 9×13″ baking dish with butter or coconut oil, set aside. Lightly flour a rolling pin and flat surface, then roll out the dough into a 15×9 inch rectangle carefully, avoiding too much flour to keep dough soft. Spread softened butter evenly, followed by creamy peanut butter. Sprinkle brown sugar and ground cinnamon over the peanut butter layer, gently patting so the sugar absorbs slightly.
- Add Banana Slices and Roll Dough: Arrange the banana slices in three long rows across the dough. Using your hands and thumbs, gently roll the dough tightly into a log, seam side down, to keep it together.
- Slice and Arrange Rolls: Trim no more than 1 inch off each end, then cut the log into 12 equal rolls about 1½ inches wide using floss or a serrated knife. Place the rolls spaced in the greased baking dish, leaving enough room for rising.
- Allow Rolls to Rise: Put the pan in a warm, draft-free place (such as a slightly warmed oven) to allow the rolls to rise again slightly for about 15 minutes.
- Preheat Oven and Bake: While rolls are rising, preheat the oven to 350ºF (175ºC). After rising, remove the rolls from the oven and bake for 18-20 minutes until they are lightly browned and cooked through.
- Make the Glaze: As the rolls cool, whisk together peanut butter, confectioners sugar, vanilla extract, and 3 tablespoons non-dairy milk. If glaze is too thick, add an additional tablespoon of milk to achieve a pourable consistency.
- Glaze and Serve: Drizzle the peanut butter glaze evenly over the warm cinnamon rolls and serve immediately for the best flavor and texture.
Notes
- To avoid stiff dough, use only a light dusting of flour when rolling out the dough.
- For overnight preparation, prepare rolls and refrigerate after cutting, then bake fresh the next morning.
- Use a warm, draft-free environment to encourage dough rising, such as turning on the oven for a few minutes then turning it off.
- Non-dairy milk options such as almond, oat, or soy milk work well in the glaze for a dairy-free treat.
