Monster Cookie Dough

  • 1/8 cup White granulated sugar
  • 1/4 cup Peanut butter (creamy)
  • 1 tsp Pure vanilla extract
  • 1 Large egg (room temperature)
  • 1/2 cup Quick oats
  • 1/2 cup Mini chocolate chips
  • 1/2 cup Mini M&M’s

Brownie Batter

  • 1 1/3 cup White granulated sugar
  • 2 Large eggs
  • 1 Egg yolk
  • 5 TBSP Unsalted butter
  • 1/3 cup Oil (canola or vegetable)
  • 1 tsp Pure vanilla extract
  • 1/2 cup All-purpose flour
  • 3/4 cup Unsweetened cocoa powder (Dutch process)
  • 1 TBSP Cornstarch
  • 1/4 tsp Salt
  • 1/2 cup Semi-sweet chocolate chips
  • 1/2 cup Milk chocolate chips

Instructions

  1. Prepare Monster Cookies: In a medium-sized mixing bowl, combine flour, cornstarch, baking soda, baking powder, and salt. In a separate bowl, beat the butter, brown sugar, and white sugar together for 1 minute until light and fluffy. Add peanut butter and mix for another minute. Add vanilla and egg, mixing until combined. Scrape the bowl and mix again for 20 seconds.
  2. Combine Monster Cookie Ingredients: Slowly add the dry ingredient mixture to the wet ingredients. Once combined, gently fold in the oats, M&M’s, and mini chocolate chips. Cover and chill the dough for 40 minutes.
  3. Preheat and Prepare Pan: When cookie dough is almost chilled, preheat the oven to 325°F (163°C). Spray a 9×9-inch pan with non-stick baking spray, then line the bottom and two sides with parchment paper for easy removal.
  4. Mix Brownie Dry Ingredients: In a medium bowl, whisk together flour, cocoa powder, cornstarch, and salt. Set aside.
  5. Beat Brownie Eggs and Sugar: Using a mixer with a whisk attachment, beat sugar, eggs, and egg yolk for 5 minutes until very light and fluffy. Melt butter while mixing to allow cooling.
  6. Add Wet Ingredients to Brownie Mixture: Gradually add melted butter, oil, and vanilla extract to the egg mixture on low speed until combined. Remove from mixer.
  7. Fold in Dry Ingredients and Chips: Using a rubber spatula, gently fold in the dry ingredient mixture, careful not to deflate the egg mixture. Next, fold in the semi-sweet and milk chocolate chips.
  8. Bake Brownie Base: Pour batter into the prepared pan and smooth evenly. Bake for 15 minutes, allowing the top to set slightly.
  9. Add Monster Cookie Topping: Remove cookie dough from the fridge. Take small handfuls and flatten into disc shapes. Place them evenly on top of the partially baked brownie base.
  10. Bake Combined Brownies and Cookies: Bake for an additional 20 minutes. Loosely cover with foil to prevent over-browning and bake another 5-10 minutes until both cookie and brownie layers are fully set with no jiggle.
  11. Cool Completely: Remove from oven and place brownies on a cooling rack. Allow them to cool completely to room temperature before cutting to ensure clean slices.
