Ingredients

Scale

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 1/4 cups granulated sugar

Wet Ingredients

  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract

Toppings

  • 1 cup mini marshmallows
  • 1/2 cup pecans or walnuts, chopped (optional)

Chocolate Glaze

  • 1/2 cup chocolate chips
  • 2 tbsp unsalted butter

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a baking dish thoroughly to prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, sift together the all-purpose flour, unsweetened cocoa powder, baking powder, and granulated sugar to ensure even distribution.
  3. Combine Wet Ingredients: In a separate bowl, whisk the melted unsalted butter with the eggs and vanilla extract until the mixture is smooth and well blended.
  4. Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined; avoid overmixing to keep the cake tender.
  5. Bake the Cake: Pour the batter into the prepared baking dish and bake for 25-30 minutes, testing doneness with a toothpick inserted in the center—it should come out clean.
  6. Add Marshmallows: Remove the cake from the oven and evenly sprinkle mini marshmallows on top; then return it to the oven for an additional 5 minutes until the marshmallows turn golden brown.
  7. Prepare Chocolate Glaze: While the marshmallows bake, melt chocolate chips and butter together in a small saucepan over low heat until smooth.
  8. Finish and Serve: Drizzle the warm chocolate glaze over the marshmallow-topped cake. Optionally, sprinkle chopped nuts for added texture. Allow to cool slightly before serving.

Notes

  • You can substitute pecans or walnuts with any preferred nuts or omit them if desired.
  • For a richer flavor, use dark cocoa powder instead of unsweetened cocoa powder.
  • Ensure not to overbake the cake to maintain its fudgy texture.
  • To make it gluten-free, use gluten-free all-purpose flour blend.
  • Store leftovers covered at room temperature for up to 2 days or refrigerate for longer freshness.
