Tzatziki Sauce

  • ½ cucumber (grated, squeezed dry)
  • 1 tbsp fresh lemon juice
  • 1 garlic clove (minced)
  • 1 tbsp fresh dill (chopped)
  • Salt & pepper (to taste)

Vinaigrette Dressing

  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp honey (omit for Whole30)
  • 1 garlic clove (minced)
  • ½ tsp dried oregano
  • Salt & pepper (to taste)

Instructions

  1. Marinate Steak: In a small bowl, mix together olive oil, minced garlic, fresh lemon juice, dried oregano, dried thyme, salt, and black pepper. Coat the sirloin steak evenly with this marinade and refrigerate for at least 30 minutes, up to 4 hours, to let the flavors penetrate the meat.
  2. Make Tzatziki: In another bowl, combine Greek yogurt, grated and squeezed cucumber, lemon juice, minced garlic, fresh dill, salt, and pepper. Stir well and chill in the fridge to allow the flavors to meld while you prepare the rest of the dish.
  3. Make Dressing: Whisk together olive oil, fresh lemon juice, honey (optional), minced garlic, dried oregano, salt, and pepper in a small bowl to create a bright and tangy vinaigrette.
  4. Cook Steak: Heat a skillet over medium-high heat and sear the marinated steak for 4 to 5 minutes on each side until cooked to your preferred doneness. Remove from heat and let it rest for a few minutes before slicing thinly against the grain for maximum tenderness.
