Ingredients

Scale

For the Salmon

  • 1 1/2 pound salmon, cut into 6 (4-ounce) fillets
  • 1 tablespoon extra virgin olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Lemon wedges, to serve

For the Creamy Dill Sauce

  • 1/2 cup Greek yogurt
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, crushed or finely grated
  • 2 tablespoons finely chopped fresh dill, reserving a few fronds of dill for garnish
  • 1/2 teaspoon dried dill
  • 1 teaspoon lemon juice
  • 1/4 cup hot water, plus extra as required
  • Salt, to taste
  • Freshly ground pepper, to taste

Instructions

  1. Preheat the Broiler: Place the oven rack about 6 inches from the broiler heating element and set the broiler to high to prepare for cooking the salmon.
  2. Prepare the Salmon Fillets: Pat the salmon fillets dry with paper towels and arrange them evenly on a foil-lined baking sheet. Drizzle 1 tablespoon of extra virgin olive oil over the fillets, rubbing them gently to coat each piece thoroughly. Season generously with salt and freshly ground black pepper to enhance the natural flavors.
  3. Broil the Salmon: Place the baking sheet under the hot broiler. Cook the salmon for 4 to 6 minutes, depending on the fillets’ thickness. The salmon is done when the flesh turns opaque, the top gets slightly crispy, and it easily flakes with a fork.
  4. Make the Creamy Dill Sauce: While the salmon broils, combine the Greek yogurt, 1 tablespoon extra virgin olive oil, and Dijon mustard in a medium bowl. Whisk until smooth. Add the crushed garlic, fresh dill, and dried dill, stirring to combine. Whisk in the lemon juice, then slowly whisk in the hot water until the sauce reaches your preferred consistency. Adjust thickness by adding more water if necessary. Finally, season the sauce with salt and freshly ground black pepper, tasting and adjusting seasoning as needed.
  5. Plate and Serve: Transfer the broiled salmon fillets to a serving platter. Spoon the creamy dill sauce generously over the top or serve it on the side for dipping. Garnish with fresh dill fronds and lemon wedges to enhance presentation and add extra freshness.

Notes

  • You can substitute fresh dill with all dried dill if fresh is not available, but fresh dill will give a brighter flavor.
  • The broiling time may vary slightly depending on your oven and the thickness of the salmon fillets; watch closely to avoid overcooking.
  • For an extra citrusy touch, zest some lemon over the finished dish.
  • This dish pairs well with steamed vegetables, roasted potatoes, or a fresh green salad.
  • Use plain Greek yogurt for best texture and flavor in the sauce.
