Fudge Base
- 1 1/2 cups semi-sweet chocolate chips
- 1 1/2 cups milk chocolate chips
- 1/4 cup unsalted butter
- 1 14 oz can sweetened condensed milk
- 2 hot chocolate packets (or 6 tablespoons hot chocolate mix)
- 2 teaspoons vanilla extract
Topping
- Prepare Pan: Line an 8×8 inch pan or casserole dish with parchment paper or foil, then lightly spray with non-stick cooking spray to prevent the fudge from sticking.
- Combine Ingredients: In a double boiler, place the milk chocolate chips, semi-sweet chocolate chips, and unsalted butter. Stir in the sweetened condensed milk and hot chocolate powder or mix. Alternatively, use a microwave-safe bowl if not using a double boiler.
- Melt Mixture: Heat the double boiler over medium heat, stirring constantly to avoid burning, until the chocolate and butter mixture is completely melted. If using a microwave, heat for 45 seconds, stir, then continue microwaving in 15-second intervals, stirring between, until fully melted.
- Add Flavorings: Once melted, stir in the vanilla extract, then gently fold in 2 cups of mini marshmallows to evenly distribute them within the fudge mixture.
- Set Fudge: Pour the fudge mixture into the prepared dish. Sprinkle the remaining 1 cup of mini marshmallows evenly on top and gently press them into the fudge so they stick.
Notes
- Use parchment paper or foil with non-stick spray for easy removal of fudge.
- Stir constantly when melting chocolate to prevent burning and ensure smooth texture.
- If preferred, substitute hot chocolate packets with an equivalent amount of cocoa powder and sugar.
- Allow fudge to cool completely before cutting to ensure clean slices.
- Store fudge in an airtight container at room temperature or refrigerated for longer freshness.
