Ingredients

Scale

Yogurt Mixture

  • 1/2 cup full-fat Greek yogurt
  • 1/4 cup powdered peanut butter (such as PB Fit or PB2)
  • 1 tablespoon creamy peanut butter
  • 1/2 tablespoon maple syrup

Chocolate Coating

  • 1/2 cup dark chocolate chips (such as Lily’s)
  • 1 teaspoon coconut oil
  • Flaky sea salt for topping (optional)

Instructions

  1. Prepare the Yogurt Mixture: In a mixing bowl, combine 1/2 cup full-fat Greek yogurt, 1/4 cup powdered peanut butter, 1 tablespoon creamy peanut butter, and 1/2 tablespoon maple syrup. Stir thoroughly until smooth and evenly mixed.
  2. Form and Freeze the Bites: Line a plate or small baking tray with parchment paper. Using a medium cookie scoop or spoon, portion out the yogurt mixture into about 6 evenly sized bites. Place the bites in the freezer for 10-20 minutes until firm to the touch.
  3. Melt the Chocolate for Coating: While the bites freeze, melt 1/2 cup dark chocolate chips with 1 teaspoon coconut oil using a microwave or double boiler, stirring frequently until smooth and liquid.
  4. Dip and Set the Chocolate-Coated Bites: Once frozen solid, dip each yogurt bite into the melted chocolate to coat completely. Sprinkle with flaky sea salt before the chocolate sets. Place coated bites in the fridge to allow the chocolate to fully harden.
  5. Serve and Store: After the chocolate has set, enjoy the yogurt bites as a refreshing snack. Store any leftovers in the refrigerator for 3-4 days to maintain freshness.

Notes

  • Use full-fat Greek yogurt for creamier texture and better taste.
  • Powdered peanut butter lowers fat content while keeping peanut flavor.
  • Dark chocolate with higher cacao content is preferred for less sugar and richer taste.
  • Adding flaky sea salt enhances the chocolate and peanut butter flavors.
  • Freeze bites thoroughly for easier dipping and better texture.
  • Store in an airtight container to prevent absorbing fridge odors.
