Soup Base
- ½ tsp olive oil
- 1 lb ground chicken
- ¼ cup yellow onion, chopped
- 3 garlic cloves, minced
- ½ tsp dried oregano
- ½ tsp salt (more to taste)
- ½ tsp dried basil
- ½ tsp dried thyme
- 2 Tbsp tomato paste
- 4–5 cups chicken broth, low sodium
Vegetables & Pasta
- 1¾ cup frozen peas, carrots, green beans (see notes)
- 8 oz bow tie pasta/farfalle, uncooked (about one cup)
Flavor Enhancers & Garnish
- 1 Tbsp Worcestershire sauce (see notes)
- ½ cup parmesan cheese
- 1 Tbsp cilantro, chopped for garnish
- Heat the Oil and Cook Chicken: In a large soup pot or Dutch oven, heat the olive oil over medium-high heat. Add the ground chicken and begin crumbling the meat with a wooden spatula as it cooks until it starts to brown.
- Add Aromatics and Seasonings: While the meat is browning, add the chopped onion, dried oregano, salt, dried basil, dried thyme, minced garlic, Worcestershire sauce, and tomato paste. Mix well to combine.
- Add Vegetables, Pasta, and Broth: Stir in the frozen peas, carrots, green beans, the uncooked bow tie pasta, and chicken broth. Bring the mixture to a simmer.
- Simmer the Soup: Cover the pot and let the soup simmer on medium-low heat for 10-15 minutes or until the noodles are al dente and the vegetables are tender.
- Adjust Liquid and Seasoning: If the noodles have absorbed too much liquid, add an extra cup of broth or water and bring back to a simmer. Add more liquid as needed to reach your desired soup consistency. If adding water, consider adding a pinch more salt to enhance flavor.
- Add Parmesan and Serve: When ready to serve, stir in the parmesan cheese until melted and well combined. Serve the soup hot in bowls.
- Garnish: Garnish with extra parmesan, cracked black pepper, and chopped cilantro or parsley for a fresh, flavorful finish.
