This creamy Gouda Mac and Cheese is a rich and comforting twist on the classic mac and cheese. Made with smooth gouda cheese, tender macaroni, and a buttery, milky cheese sauce, it’s perfect for a cozy meal any day of the week.

Ingredients

Scale

Macaroni

  • 2 cups elbow macaroni

Cheese Sauce

  • 2 cups shredded gouda cheese
  • 2 cups whole milk
  • 4 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
  2. Make the Roux: In a large saucepan, melt the butter over medium heat. Once melted, sprinkle in the flour while whisking continuously to make a smooth paste. Cook for about 1-2 minutes until the mixture is bubbly and slightly golden but not browned.
  3. Prepare the Cheese Sauce: Slowly whisk in the milk, ensuring no lumps form. Continue to cook and stir until the sauce thickens, about 5-7 minutes. Remove from heat and stir in the shredded gouda cheese until melted and smooth. Season with salt and pepper to taste.
  4. Combine Pasta and Sauce: Add the drained macaroni into the cheese sauce and gently stir until all the pasta is evenly coated with the creamy gouda sauce.
  5. Serve: Spoon the gouda mac and cheese into bowls or plates. Serve immediately for the best creamy texture and flavor.

Notes

  • For a crispier top, bake the mac and cheese in a preheated oven at 350°F (175°C) for 15-20 minutes with a sprinkle of extra cheese and breadcrumbs.
  • Use whole milk for the creamiest texture; low-fat milk can make the sauce less rich.
  • Gouda pairs wonderfully with smoked flavors, so consider adding smoked gouda for extra depth.
  • Salt the pasta water well for seasoning from the inside out.
