Instructions

  2. Brown the Beef: Heat olive oil in a large skillet over medium-high heat. Add the ground beef and break it up with a spatula. Cook for 6–8 minutes until browned and no longer pink. Drain excess fat if necessary to keep the dish lean.
  3. Add Onions & Garlic: Stir in chopped onion and sauté for 3–4 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.
  4. Build the Sauce: Add diced tomatoes with juices, beef broth, Italian seasoning, salt, and pepper. Stir well and bring to a simmer. Let cook for 5–7 minutes so flavors meld and sauce reduces slightly.
  5. Make It Creamy: Remove skillet from heat. Stir in Greek yogurt and Parmesan cheese until the sauce becomes creamy and smooth. Adding yogurt off the heat prevents curdling.
  6. Combine Pasta & Sauce: Add the drained pasta to the skillet with the beef sauce. Toss gently to coat each piece evenly. Warm over low heat for 1–2 minutes if needed.
